Moong dal is the Hindi name for green gram. it is a small round olive green bean that is off white colour from inside. This bean has a soft flavour and texture. It is very easily digestible food. This gram is available in many types. There is whole gram, split gram, de-husked gram and ground gram. Split moong daal beans or green gram chilli is the one which is split apart but its skin is not removed. The splitting of this gram is done in mills. The gram’s colour does not change as they are not skinned.
Green moong dal is a traditional ingredient of Indian cuisines. They are often included in curries. Since this is a legume, it is rich in protein and Fibre. And it is low in fat. It can be cooked in pressure-cooker then tempered with cumin and ghee which is like a soup
Dishes like Mung dal spicy curries, Mung dal khichri, Mung dal Tarka, Vada, dosa, and rasam can be prepared with this dal
Split lentils are often cooked like soups as they do not hold their shapes.
In Tamil nadu this green daal is cooked with jaggery and milk flavoured with cardamom to make a sweet dish known as payasam.
Vegetable fritters can be made with this daal by grinding it into powder.
It can also be soaked in water overnight and made into the batter for vada, dosa and many more dishes.
